A wall chart is a detailed list of information on the players in a tournament section. It is usually ordered by pairing number (rating), but it can also be done by name, team or standings. It includes at a minimum, the players' names, ratings and a round-by-round table. How To: Print Wall Charts explains how to produce one. A cross-table offers less detail (you can't for instance, get color information), but takes only one line per player.
Here is a sample wall chart, with instructions on reading it:

This wall chart lists the players sorted by their pairing numbers. These begin with 1 for the highest rated (here Mikhail Botvinnik). Let's look at the information for Botvinnik a piece at a time.

a.State (from US Chess membership records). This field might not be present in the chart you are reading.
b.ID (whichever one is active in your section). In an unrated tournament, this field also might be skipped.
c.The special prize group. In scholastic tournaments, this will usually be the player's grade. It probably will be blank in adult tournaments.
d.The team abbreviation. It will probably be blank in adult tournaments.
e.His rating. NNNN is used for someone with no rating.
f.If there are numbers in both lines in the rating column, the top one is the "main" rating and the bottom is the "second/local" rating.
g.The color (W=white and B=black) and opponent's pairing number.
h.The bottom line shows the total score through the round. To figure out a player's result in a single round, you will have to compare the listed score with that of the previous round. In round 1, Botvinnik was White against player 5 (Smislov) and drew. In round 2, he was Black against player 4 (Morphy) and won (his total score went from 0.5 to 1.5).
